The Tinney family, operators of
Bread & Spice
Daniel Tinney was in Baltimore when he saw a real estate listing advertising a fully equipped bakery on Covington's Pike Street so he called his wife Dawn who was back home in Falmouth to go and check it out. "This is something I've wanted to do for twenty years and from the listing it sounded like something I was looking for, so I thought I'd give it a shot," Tinney said. While Tinney, a veteran registered nurse was on a work-related trip to Johns Hopkins Hospital in Maryland, he was reading a magazine that featured an article about Iranian cuisine. "I thought, that's interesting," he said, "and the title of the article was, "From the land of bread and spice." Not only had the Tinneys found a space to open their long-dreamed of business, but they also had a name for it.

Bread & Spice will be open Monday through Friday from 7:00AM to 3:00PM and may open on Saturdays from 8:00AM - 3:00PM, though those details are still being worked out for the business which opened this week. One thing is for certain, though: Sundays the business will be closed so that the Tinneys can have some family time. Daniel and Dawn have six kids, four of whom are still at home in Falmouth from where they will commute each day to open Bread & Spice. It's a familiar drive for Daniel who worked in Cincinnati as a nurse for roughly fourteen years. Now, the trip will be a family affair as the kids will be busy at work, too.

Bread & Spice will operate as a small-scale bakery and as a breakfast and lunch spot in the former AJ Creations gluten-free bakery space. It will feature a predominantly vegetarian-friendly menu, though meat will also be available. "A lot of times in restaurants I just wanted to have something good," Tinney, a vegetarian, said. "A lot of times they'd say, oh, we'll put something together for you."

"He got tired of pasta primavera," Dawn said.

The Tinneys will wake up around a quarter to five in the morning and make their way to Covington so that Bread & Spice can serve entrees inspired by North African, Middle Eastern, Asian, and Mediterranean cuisine. "A lot of spice, not hot, but a lot of layers of flavor," Tinney promised.
